Currently, the price of kumquats has decreased, last week it was 35,000 VND/kg, this week it is only 15,000 - 20,000 VND/kg. Every day, I sell about 100 kg. Many customers order kumquats in quantities of several kg to soak in rock sugar to treat coughs".
According to her, if you choose to soak kumquats, this is the best time because the kumquats are ripe, and the cough medicine will be more effective. The way to soak kumquats is relatively simple, just buy about 1kg of kumquats, 1kg of rock sugar or honey.
"Wash the kumquats with cooled boiled water, wait for them to drain. Use scissors to gently cut the stem of each fruit, do not pluck them by hand because it can bruise the fruit, making it easy for it to float when soaked. Put the fruit in a sterilized glass jar, then sprinkle a layer of rock sugar or pour honey on top, making sure to cover the top surface. Close the jar tightly, tie or screw the lid tightly. Store in a dry place, away from direct sunlight. Soak for 2-3 months, the sugar layer will gradually dissolve, releasing a thick syrup mixture with a characteristic kumquat scent. You can mix it with warm water to drink every time you have a cough or sore throat, or suck it directly" - she shared.
Ms. Van Anh added: "When soaking, absolutely do not let water get in, do not open it to check continuously because it can easily cause mold. After 2-3 months, the standard kumquat jar will have a golden color, a mild aroma, a sweet taste and no scum."

How to make kumquat
Step 1: Choose ripe, plump, shiny kumquats. Then wash them, soak them in diluted salt water for about 10-15 minutes, then rinse them again and drain. You can use a towel to dry them quickly.
Step 2: Use the tip of the scissors to pinch a little bit at the top of the fruit, then squeeze gently to push out all the seeds. Avoid squeezing too hard so that the fruit flesh does not fall out.
Step 3: Mix kumquat, rock sugar, and salt together, leave in the refrigerator until the sugar and salt dissolve.
Step 4: After the sugar has melted, put it on the stove and cook over low heat. During the cooking process, you should stir continuously to avoid burning. Cook until the sugar is almost sticky and turns golden brown, then remove from heat and add honey and continue to stir.
Step 5: Wait for the persimmons to cool, divide them into small pieces and put them in jars according to your needs. Store in the refrigerator. When you want to use them, you can microwave them for 30 seconds or leave them at room temperature for about 15-20 minutes.
