Ingredient
White salt
You should choose pure white salt, dry and free of impurities. Depending on the amount of shrimp salt you plan to make, prepare the corresponding amount of white salt.
Normally, for a small jar of shrimp salt, you will need about 150 - 200 grams of white salt (about 2 ounces of white salt).
Dried shrimp
Dried shrimp is an indispensable part of shrimp salt. Like salt, the amount of dried shrimp you prepare will also depend on the actual needs you want to make.
For dried shrimp, prepare a mass equal to half the mass of previously prepared white salt.
White sugar
Adding white sugar to the shrimp salt will make the salt less salty, and at the same time enhance the flavor of the salt. You should also prepare the same amount of white sugar as the dried shrimp, which is half the amount of white salt.

Chili powder (or fresh chili)
You can choose fresh chili or chili powder depending on your taste. Fresh chili has the advantage of being spicier and more aromatic, however chili powder will ensure dryness and less spiciness. Other spices: Fish sauce, pepper, MSG.
Making
Step 1: Prepare dried shrimp, wash and soak in hot water until soft for about 1 hour. After soaking, take out, drain and let the shrimp dry again.
After the shrimp has drained, put the shrimp in a small, clean bowl. Then, add about 2 teaspoons of fish sauce, ½ teaspoon of MSG and mix well, then let the shrimp marinate for about 30 minutes.
Step 2: Grind the shrimp: Put the marinated shrimp into a blender (you can use a blender) or mortar to grind/pound the shrimp.
Note that during the grinding/pounding process, you should stop and stir evenly to ensure that all the shrimp meat has been fluffed.

Step 3: Roast shrimp with salt: Add the ground shrimp and mix with the prepared amount of salt, chili powder, sugar, and pepper and stir well.
You should mix these ingredients well before roasting to get the most consistent quality of shrimp salt. After mixing all the ingredients well, add small portions of shrimp salt to the pan to dry roast (dry roast).
Note that you should cook with a small flame to avoid burning the shrimp salt and stir constantly to dry the salt evenly.
After roasting the shrimp salt, pour it into a bowl and let it cool before using. Shrimp salt is usually stored in a glass jar or dry plastic jar in a cool place and can be used for 1-2 months.
