Banh Bau is an ancient cake, which was lost and was brought by artisan Huynh Ngoc Lan ( Soc Trang ) to the Southern Traditional Cake Festival in 2018. Banh Bau has gradually become popular and loved because it is not only delicious but also has the rustic flavor of the Western people.
Gourd is an ingredient commonly found in many people's home gardens, because it is easy to grow and easy to prepare dishes. Among them is Bau cake. The main ingredients to make Bau cake are rice flour, coconut milk and young gourd. Bau cake has two types: sweet and salty. Therefore, the way to make it is also a bit different.
To make the cake, first you have to choose a young gourd, peel it, shred it, and remove the seeds. Mix the rice flour with coconut milk, add a little salt and sugar (if making sweet gourd cake). Then mix it with the shredded gourd. This mixture is steamed for 20-30 minutes. When the cake is almost done, sprinkle green onions on top to decorate. Sweet gourd cake is served with coconut milk.
Meanwhile, salty banh gourd is made in a similar way to sweet banh gourd, but the rice flour mixture does not contain sugar. Instead, the cake will have a filling of minced shrimp. This filling is added when the cake is almost cooked. The dipping sauce for salty banh gourd not only has coconut milk but also a little sweet and sour fish sauce, to enhance the deliciousness and reduce the fat of the cake.
When eaten, the squash cake has the natural sweetness of squash and a little fat from coconut milk, very tasty.
