How to choose fresh ingredients
How to choose fresh beef
To choose good beef, you should observe the color of the meat. Fresh, delicious meat is usually bright red, not dark red, and beef fat is light yellow.
You should choose to buy small, soft pieces of meat with fine grain and good elasticity when pressed.
Do not buy meat with small, white cysts that easily come off because it is likely that the meat is infected with tapeworms. If you choose to buy pre-processed and canned meat, remember to carefully check the origin and expiration date.
How to choose good Vietnamese coriander
You should choose to buy fresh Vietnamese coriander, small leaves, characteristic aroma, not wilted and no strange smell. You should not choose to buy Vietnamese coriander with large, shiny leaves because it is less fragrant and not as delicious as Vietnamese coriander with small leaves.

Or use lemon or vinegar to rub on the beef for 5-7 minutes then rinse with clean water. Grill 1 ginger root then crush, rub on the beef then rinse clean.
Next, use a knife to cut the beef into thin slices horizontally. To cut beef, you just need to cut it thinly and across the grain. Cutting beef properly will help you prepare the dish faster and not make the meat tough. You can put the beef in the refrigerator for 20-30 minutes, which will help the meat firm up and make it easier to cut. In addition, you can also marinate the beef with a little cooking oil, the beef will be softer and not tough.
