Chu rice noodles are made from bao thai hong rice, a specialty rice variety grown in Chu land, bringing a delicious flavor, chewy and crispy noodles that are unmistakable. The pure underground water source from the Luc Ngan mountains also contributes to the special quality of the product. The rice is carefully selected, soaked overnight, ground into flour, spread into thin cakes, dried under natural sunlight and then cut into noodles. Each step is done manually or semi-manually.
From small-scale household production, the Chu rice noodle industry has grown strongly with the participation of nearly 30 cooperatives and more than 1,000 production households in Chu ward and Nam Duong commune. Chu Xuan Truong Noodle Cooperative, established in 2009, currently produces about 35-45 tons of noodles/month, of which three tons are consumed through the e-commerce platform Postmart.vn. Hien Phuoc Cooperative supplies 20-30 tons of noodles/month, with a stable export contract to Russia just signed in 2025 with an output of 40 tons/month. The cooperatives have invested in modern production lines, such as heat-dissipating dryers and gas ovens, helping to reduce dependence on the weather and ensure food hygiene and safety.
The Chu rice noodle output of cooperatives is estimated at 20,000 tons/year, with a revenue of more than 500 to 700 billion VND/year. Chu rice noodles are recognized as OCOP products, with VNPT -Check traceability stamps since 2017, helping consumers easily check information about the origin. The Chu rice noodle brand is exclusively protected in five countries: Laos, Japan, Korea, Thailand and Cambodia, creating a solid foundation for export.
Chu rice noodles have gone beyond local borders to be present in major supermarkets such as Big C, VinMart, Coop Mart, and convenience stores nationwide. In the international market, Chu rice noodles are present in Japan, Korea, Russia, France, Australia and Hong Kong (China).
The Chu rice noodle industry with more than 1,000 production facilities provides jobs for thousands of workers, especially women and young people, with an average income of 8.5 million VND/person/month. Thu Duong craft village alone, with more than 300 production household, achieves an output of 12,000-13,000 tons/year, bringing in a profit of about 50 billion VND. The noodle making profession not only helps many families escape poverty but also promotes supporting industries such as transportation, packaging, and trade. The development of the Chu rice noodle industry also contributes to the transformation of the rural economic structure, reducing dependence on agriculture.
To meet consumer tastes, cooperatives have created many new types of noodles, such as five-color noodles (made from gac fruit, carrots, turmeric, beetroot), brown rice noodles and vegetable noodles. Ms. Nguyen Thi Kieu Anh, Director of Chu Dau Anh Noodle Cooperative, has pioneered the production of vegetable noodles with eye-catching colors, certified for food safety and hygiene, and consumed 7-10 tons/month.
Currently, Chu rice noodle production cooperatives are promoting production modernization, such as investing in large-scale drying kilns and standard warehouse systems, to reduce dependence on the weather. E-commerce applications, such as selling on Postmart.vn, Shopee and social networks, also open up new consumption channels. Developing tours to experience Thu Duong craft village also promises to increase brand value and income for local people.
Chu rice noodles are not only a culinary product but also the pride of the people of Bac Giang (old). From Thu Duong craft village, the delicate noodles have conquered domestic and foreign markets.
