Why does pickled plum have scum?

How to fix the scum on pickled star fruit without having to throw it away

+ Method 1: Reboil the star fruit water and soak it again by removing the scum layer and the star fruit on top that shows signs of spoilage. Then, remove the remaining star fruit layer to drain, boil the water again and let it cool completely, then soak the star fruit again.
+ Method 2: Use roasted green beans. Use 100gr of whole green beans, roast them until cooked, then put them in a clean cloth bag. Place the bag of roasted beans in the jar of pickled plums, leave it for a few days, then take it out. The green beans will absorb moisture and clean the layer of scum floating on the jar of pickled plums.
+ Method 3: Separate the star fruit and water. Use hot water at about 50-60 degrees and rinse the star fruit that has formed a film, let it drain completely. Boil the star fruit water again, let it cool completely. Finally, soak the star fruit again as before.
An important note to keep the pickled plums from floating, everyone needs to pay attention to cleaning the jar. Make sure the jar is clean, preferably rinsed with boiling water before use. The plums need to be washed, can be soaked in salt water to remove dirt and impurities and drained before soaking. In addition, you need to blanch in boiling water before soaking or you can boil them, the plums will be crispy and not floating with scum.
Instructions for soaking star fruit without scum or mold
To limit the situation of pickled plums getting moldy and scum, it is important to soak them properly. Everyone can refer to Ms. Hong Thom's instructions, and can rest assured to make pickled plums at home without worrying about spoilage or scum.
Ingredient:
+ 1 kg of ripe star fruit.
+ 1 kg sugar
+ 2 – 3 ginger roots.
+ 1 clean and dry glass jar
Making:
Step 1: Prepare the star fruit: Peel the star fruit, wash it and make spiral cuts around the fruit to help it absorb the sugar quickly and eat it faster. If you don't want it to be quick, leave the fruit whole, no need to cut it.
Step 2: Blanch the star fruit. This is an important step to get a jar of star fruit that does not float. Accordingly, you boil a pot of water, then add the star fruit and blanch until it turns yellow, turn off the stove and pour the star fruit into a basket to cool and drain thoroughly.
Step 3: Put a layer of star fruit in the jar, then a layer of sugar and so on until finished. Place the jar in a dry place, cover tightly for about 1 day to let the sugar dissolve and soak into the star fruit. Undissolved sugar will also sink to the bottom.
Next, pour all the sour plum juice into the pot and add a little salt to boil it. In the pot of water, add some crushed ginger into the pot for fragrance. Continue to boil the water for about 3 minutes, turn off the stove and wait for it to cool, then pour it back into the sour plum pot.
