U Minh Thuong is a freshwater land, thanks to which freshwater products here are abundant, especially snakehead fish. In the past, there were a lot of snakehead fish, especially snakehead fish. However, in recent years, the natural fish resources have decreased. Local authorities encourage people to renovate ponds and lakes to raise snakehead fish, both to preserve precious species and to serve tourists. The fragrant fish meat combined with the fresh taste of wild vegetables creates a rich, rustic, unforgettable flavor.
Unlike other fish sauces in the West, buffalo tongue fish sauce impresses diners with its rich flavor and the color of many vegetables from the U Minh river region. According to Luu Thanh Lap, a resident of U Minh Thuong commune, buffalo tongue fish used to have no value. When fishermen catch it, they often throw it away because few people ate it. However, in recent years, under the skillful hands of local people, buffalo tongue fish has become a valuable ingredient to make the rich specialty fish sauce of the U Minh Thuong region. Buffalo tongue fish sauce delicious can be used to make many dishes, such as: steamed fish sauce, braised fish sauce, fish sauce hotpot... but the simple dish that captivates diners the most is raw fish sauce served with boiled meat, wild vegetables and green bananas. The salty taste of fish sauce, the spicy taste of chili, the sour taste of lime juice and the slight astringency of wild vegetables, create a unique, rich blend. A full meal in the West includes a few fragrant grilled snakehead fish, a bowl of raw fish sauce mixed with garlic, chili, sugar and lime juice, and a basket of fresh wild vegetables... just looking at them makes people crave them.
Besides grilled snakehead fish and buffalo tongue fish sauce, fruit wine is also a specialty of U Minh. The wine is made from ripe fruit, fermented with sugar for natural fermentation. After the fermentation period, the mixture forms a smooth, purple-red nectar, with a strong aroma, slightly sweet like purple sticky rice, when drunk, it is not harsh on the throat, but smooth and pleasant. According to local people, delicious fruit wine must be made from wild fruit - a typical fruit found only in the Upper U Minh region. Not only used to brew wine, fruit is also a familiar ingredient in many rustic dishes such as sour soup, braised fish... Among them, sea perch braised with fruit is a special dish that anyone visiting Upper U Minh should try. The sea perch here has firm, fragrant meat, with few bones. When braised with fruit on a low stove, the fish meat is evenly absorbed, blended with the characteristic sour taste, slightly spicy from green chili, creating a flavor that is both fatty and rich, irresistible. This dish is served with lotus flowers and young shoots dipped in a boiling pot of stew, a rustic yet captivating culinary experience in the heart of the Southern forest.
