When simmering, stir occasionally until the jam is almost thick, then stir quickly until the sugar is completely dry, each slice of ginger is straightened and placed on top of each other in layers. After the ginger jam is straightened and dry, let it cool and put it in a glass jar or plastic bag for long-term storage.
