TasteAtlas’ Southeast Asia’s Top 100 Meats culinary ranking is based on reader reviews using a series of mechanisms to identify real users and ignore bot reviews, nationalism or local patriotism, while adding value to reviews from users the system recognizes as knowledgeable. As of August 2025, there were 5,416 reviews recorded by TasteAtlas for the Southeast Asia Top 100 Meats list. The TasteAtlas ranking aims to promote great local food, instill pride in traditional dishes and spark curiosity about what visitors can experience.

According to Tasteatlas, Vietnam's Beef in Vinegar Hot Pot is ranked third in the list of 100 meat dishes for tourists to choose from. This is a traditional Vietnamese hot pot dish, served communal style. The dish basically consists of a vinegar-based broth, which can be supplemented with coconut milk or coconut water, lemongrass, onions or other ingredients, while the usual side dishes include thinly sliced raw beef and a variety of fresh vegetables such as bean sprouts, white radish, lettuce, cucumber, mint, basil and perilla leaves.

A dish that often appears on the daily dinner table of every Vietnamese family, Vietnamese Caramelized Pork Belly is also on the list. Vietnamese Caramelized Pork Belly is a traditional dish consisting of braised pork belly with eggs. This dish is made from a combination of pork belly, garlic, shallots, soy sauce, sugar, fish sauce and boiled eggs. The braising liquid usually includes oil, garlic, shallots and coconut water.

Vietnamese Shaking Beef is a quick pan-fried beef dish served with watercress and sliced tomatoes. Additional toppings may include pickled onions, and a dipping sauce. This dish was once a rare delicacy, prepared and served mainly on special occasions. Today, it is more common, but shaking beef is still considered a restaurant specialty and a traditional dish for special occasions.

Vietnamese Beef Stew is a famous Vietnamese beef stew that can be eaten on its own or, more commonly, with bread. It can also be served with noodles, and is often accompanied by a variety of herbs. The ingredients include cubed beef, carrots, lemongrass, cinnamon, chili, pepper, garlic, and shallots, all simmered in a delicious, spicy broth.

Bun Cha (Grilled Pork Meatballs with Vermicelli Noodles). A very popular dish that is closely associated with Hanoi , where it is believed to have originated. The dish combines three elements: a bowl of grilled pork meatballs served in a cold broth, a plate of vermicelli noodles, and a combination of various fresh herbs such as perilla leaves, lettuce, coriander, and water spinach.
While bun cha or similar variations can be found elsewhere in Vietnam, the local version in Hanoi is highly regarded. Little is known about its history or origins, but the dish gained international recognition in 2016 when it was featured on the food travel show Parts Unknown, where host Anthony Bourdain enjoyed bun cha with former President Barack Obama at a bun cha restaurant in Hanoi.

Grilled Beef Wrapped in Betel Leaf is a traditional Vietnamese dish made from ground beef, combined with spices and onions before being wrapped in betel leaves and grilled over charcoal. This beef roll is usually served with vermicelli noodles, rice paper, raw vegetables, herbs, pickles and dipping sauce.

Vietnamese Steak and Eggs, a traditional dish popular in the coastal city of Nha Trang. Marinated beef tripe is served on a sizzling cast iron plate with fried eggs, onions, chilli sauce and a spoonful of pate. The dish is usually served with condiments and bread, along with lettuce, onions, tomatoes and cucumbers. The meat is often dipped in a mixture of pepper sauce, lemon juice and salt, while the bread is used to scoop up the remaining pate and egg yolks on the plate.
In the list of 100 best meat dishes in Southeast Asia, Vietnam also appeared with the following dishes: Broken Rice with Grilled Pork; Grilled Ground Pork on Lemongrass Skewers; Vietnamese Chicken Curry; Stir-Fried Pho; Lemongrass Chicken; Duck Noodle Soup with Bamboo Shoots; Meatball Bread; Vietnamese Beef Meatballs; Boiled Chicken and Vietnamese Shredded Chicken Salad.
