Winter melon tea
Ingredients for making winter melon tea:
+ 400g squash (remove seeds, do not peel)
+ 2 monk fruit
+ 15 red apples
+ 1 spoon of goji berry rice
+ 10 longan pills
+ 15 dried chrysanthemum flowers
How to make winter melon tea:
Put all ingredients in a large pot, bring to a boil. Reduce heat, continue to cook for 30 minutes to let the ingredients release their essence. Let cool, filter the residue, put in a bottle, store in the refrigerator and use gradually within 2-3 days.
When drinking, you can add chia seeds, ice cubes or a few drops of lemon/lime juice for flavor.
Crispy shredded chicken and winter melon salad, refreshing and anti-boring
This dish is extremely "appetizing", suitable for summer lunch or as an appetizer at a light party.
Ingredients for winter melon and chicken salad:
+ 2kg squash
+ 200gr roasted peanuts
+ 200gr shredded boiled chicken breast
+ Coriander/Perilla
+ 50gr chili
+ 20gr garlic
+ Kumquat
+ 50gr ripe pineapple.
Making:
Step 1: Make the dressing: Prepare 210g sugar, 100ml fish sauce, 50g pureed ripe pineapple, 20ml vinegar, 50g chili, 20g garlic, 3 kumquats, MSG. Puree the mixture, boil for 3-5 minutes and let cool.
Step 2: Shred the squash, take the green part and marinate with salt for 10 minutes, then squeeze dry.
Next, mix squash with dressing, shredded chicken, herbs and sprinkle roasted peanuts, mix well.

Stuffed squash soup with shrimp and meat
Ingredient:
+ Young squash 500g
+ Peeled and minced shrimp 150g
+ 150g ground lean shoulder meat
+ Wood ear mushrooms, dried onions, pepper, fish sauce, seasoning powder
Making:
Cut the squash into 2cm thick slices, scoop out the seeds. Mix shrimp, meat, wood ear mushrooms, spices and stuff into the middle of the squash slices. Boil the broth, add squash and cook until soft. Season to taste, sprinkle with pepper, green onions and cilantro, serve hot.
