Nam O fish salad is named after a small fishing village located on the coast, about 10km north of Da Nang city center. According to the locals, there are two ways to prepare dry and wet salads, each with its own unique features, depending on the taste of the diners. However, both dry and wet salads are made from fresh herrings with the same ingredients and spices, the only difference is the final processing step.
For dried herring salad, Nam O people choose fresh fish, clean, process, slice, cook, drain and then mix the fish meat with typical spices such as rice powder, roasted sesame, roasted peanuts, crushed grilled rice paper with many types of fish sauce, salt, fish sauce and vinegar. This step will help coat the fish with a thin layer of flour, contributing to the rich, fatty taste of the fish meat.
On the contrary, the wet salad dish has the herring after being cleaned, marinated with ginger, galangal, garlic, minced chili and soaked in broth mixed with Nam O fish sauce to create the characteristic flavor of this dish. The dipping sauce is prepared according to a family recipe, each person has their own style, creating the unique features of each restaurant in Nam O.
