The brand "Banh loc Me Xuan" has existed for nearly 50 years in Quang Binh , and was "born" by Ms. Ha Thi Xuan (73 years old, living in Hai Thanh ward, Dong Hoi city).

While wrapping banh loc, Mrs. Xuan said that after returning from the battlefield, she and her husband worked hard at many jobs but could not make much money. Suddenly, one day, she remembered the secret of making banh loc and banh nam that her mother-in-law had passed down to her, so she decided to start a business selling banh loc.

The cake is made from rustic ingredients such as tapioca flour, shrimp, pork belly, wood ear mushrooms... and wrapped in banana leaves. When boiled, the tapioca flour is clear, the shrimp is sweet, the pork belly is fatty, and the refreshing aroma of banana leaves blends in.

"The most important thing is choosing the ingredients. The shrimp must be small from the river mouth, with a strong alluvial flavor and a salty taste of the sea. The shrimp is braised until dry, soaked in spices, then stir-fried with wood ear mushrooms and marinated meat. Thanks to that, the cake filling is both sweet and fatty, without any fishy smell" - Ms. Xuan shared.

The cake is made from tapioca flour, shrimp, pork belly, and wood ear mushrooms.

Me Xuan's Banh Loc has two types: Banh Loc Tran and Banh Loc La. Banh Loc Tran has a filling of shrimp, minced pork, pickled bamboo shoots and onions, and is very delicious when fried. Banh Loc La, in addition to the above ingredients, also adds wood ear mushrooms and is wrapped in banana leaves and steamed. The small, transparent pieces of cake clearly reveal the red-orange shrimp filling... when dipped in a bowl of rich garlic and chili fish sauce, creating an unforgettable flavor.

From a small street vendor, Ms. Xuan has now built a large production facility in Dong Hoi City, supplying 15,000 - 20,000 cakes per day to people across the country.

"Near Tet, many overseas Vietnamese have ordered cakes to bring to Korea and Japan. Recently, a person ordered 5,000 banh loc to bring to England, both to enjoy and as gifts for friends" - Ms. Xuan proudly said.

Me Xuan provides 15,000 - 20,000 cakes per day.

Currently, her daughter, Ms. Le Linh, has continued her mother's career, maintaining the traditional way of making cakes while modernizing it. In addition to building a brand, Ms. Xuan's shop has created jobs for nearly 30 workers with an income of 7-8 million VND/person/month.

Over the past 15 years, Ms. Xuan has spent 50-70 million VND each year to help and give Tet gifts to people in difficult circumstances. Recently, the Department of Industry and Trade of Quang Binh province has granted a certificate of trademark "Banh loc Me Xuan" of Ms. Ha Thi Xuan.
