Simple method to keep mangoes fresh for a whole month

New research from Australia has found a simple way to make mangoes more cold-resistant and extend the shelf life of the tropical fruit.

Scientists at Edith Cowan University (ECU - Australia) have discovered that soaking mangoes in ozone water for 10 minutes before cold storage can extend the shelf life of mangoes by two weeks, double the usual time, while significantly reducing damage caused by cold, according to ScienceDaily on July 17.

“Increasing the shelf life of mangoes is important for growers and businesses, helping to reduce post-harvest losses and extend the time to market,” said Dr Mekhala Vithana, lecturer in the School of Science at ECU.

It is estimated that around 20% of Australia’s mango crop is lost along the supply chain, so the research team focused on finding environmentally friendly and cost-effective technologies that could help reduce post-harvest losses.

The team conducted research on the Kensington Pride mango variety, a popular variety in Australia. After dipping the mangoes in ozone water for 10 minutes before freezing them at 5 degrees Celsius, the team found they could keep the mangoes fresher for longer with less damage from the cold.

Normally, Kensington Pride mangoes can only be stored for about two weeks without ripening at 13 degrees Celsius. Unripe mangoes should not be stored below 12.5 degrees Celsius because they are sensitive to cold temperatures and can easily spoil. However, mangoes soaked in ozone water for 10 minutes can be stored well for up to 28 days, with a 40% lower risk of cold damage than untreated mangoes.

Ozone is a compound widely used to disinfect fruits and vegetables. Dr Vithana said the technology can be done on-site, which is cost-effective and safe for workers.

The team hopes to conduct further research on other mango varieties to test their response to ozone technology, and further reduce overall mango losses during long-term cold storage.
