Ms. Tran Thi Chung said that her family has been making fish sauce for over 60 years, and previously the production scale was small. In 2018, the locality started implementing the OCOP program, and her family's fish sauce products began to participate in completing related stages.

By 2023, Co Chung fish sauce will be recognized as a 3-star OCOP product, and its consumption market will increasingly expand to a number of provinces and cities across the country.

To have enough raw materials for production, Ms. Chung buys from 30 to 40 tons of anchovies each year. The longer the fish is fermented, the better the fish sauce will be.

Specifically, the first 3 months the fish sauce is raw; 6 months it is incubated, 12 months the fish sauce begins to ripen, and 18 months the fish sauce is ripe with a fragrant aroma.

After 18 months of fermentation, the water will be clear amber with a protein content of 35% or more. With 30 tons of fish per year, Ms. Chung can harvest 20,000 liters of fish sauce, with a stable selling price of 60,000 VND/liter.

At first, Ms. Chung’s fish sauce products were only sold in small quantities, at markets and in neighboring communes. People gradually got used to it, liked the taste of traditional fish sauce and bought more.

After participating in the OCOP program and the product was ranked 3 stars, Co Chung fish sauce was favored by customers inside and outside the province.

As for the Da Nang route, she often sends Van Tinh vehicles to bring them out when customers need them. Besides, Ms. Chung also participates in many trade fairs, OCOP fairs in Quang Nam and other provinces and cities.

“The local support through practical programs helps my family have more capital to invest in production and promote products; such as the new rural construction program supporting 79 million VND, the OCOP program supporting 64 million VND.

With the results achieved, in the coming time, my family will invest in a factory, expand production, contribute to improving quality, and create trust for customers" - Ms. Chung said.
