Bui Xa quarter in Ninh Xa ward, Thuan Thanh town, Bac Ninh province currently has about 130 households making Bui spring rolls, generating revenue of 140-150 billion VND per year.

Mr. Pham Viet Cuong - Secretary of Bui Xa Ward said that although the village has been moved to the city, there is still a lot of agricultural land, most of the people have pooled their land to lend or rent to focus on the traditional profession of making Nem Bui. The difference of Nem Bui is that it must use hot meat, butchered pigs, the buttocks are still warm and the owner has mixed them with a little fat, skin and spices. Nem Bui has similarities with Nem Phung but the ratio of lean meat is higher and only uses roasted rice powder. The pork is steamed rare and then mixed with powder to create a characteristic sweetness and aroma.

The ward secretary's house also makes Bui spring rolls, producing 1,000 rolls a day, each weighing 300 grams, and is considered small in scale, while larger houses make several thousand rolls a day. Bui Xa's total daily output is about 100,000 rolls with a selling price of 30-50,000 VND/roll depending on whether it is regular or custom-made, mainly exported to neighboring provinces and cities such as Hanoi, Bac Ninh City, and Bac Giang .

Each household in the neighborhood is in charge of a stage, this household makes spring rolls, that household makes leaves, that household makes rice powder… creating jobs for thousands of workers with an average income of 8-10 million VND/month.

However, it is worth noting that people with experience making Nem Bui are increasingly rare, mostly old, while their children often choose other jobs, few people follow this profession because of the hard work, meticulousness and low income.
