3 Hanoi dishes recognized as national heritage

According to the Ministry of Culture, Sports and Tourism, all three intangible cultural heritages have full values ​​such as representation, expressing community and local identity, reflecting cultural diversity and human creativity, and being inherited through many generations. These heritages have the ability to recover and exist for a long time, and are agreed upon by the community, voluntarily nominated and committed to protection.

Vinh Hung Ward (former Thanh Tri District) has a traditional rice cake making profession. Unlike rice cake in other localities that are eaten hot, rice cake here is pre-made, eaten cold, dipped in fish sauce, served with cinnamon sausage or meatballs. The rice cake making profession also has folk knowledge values ​​about the production process of the cake, which is carried out sequentially from the stages of selecting rice, soaking, grinding with a stone mortar and making it by hand. According to statistics, Vinh Hung Ward currently has more than 50 households making rice cake, maintained through many generations, providing a large quantity of cakes to wholesalers every day.

In 2016, La Vong fish cake was introduced by CNN as one of the most delicious dishes in the world . La Vong fish cake is made from pieces of fresh catfish, carefully deboned, marinated with spices with a characteristic turmeric yellow color. The fish is lightly fried, when customers order, it is turned over in a hot pan, added with dill, chopped green onions, eaten with fresh noodles, sprinkled with shrimp paste, and sprinkled with roasted peanuts. The ingredients are not too sophisticated but are combined harmoniously, creating a flavor that many diners love. This is also a dish that appears in the suggestions of the Michelin Guide and is one of the dishes that Tripadvisor encourages visitors to try when coming to Hanoi.

In addition to the long-standing and famous pottery craft, Bat Trang is also the "cradle" of Hanoi's unique cuisine. Bat Trang dishes are famous for their unique features that have been preserved and promoted by the people for hundreds of years.

Normally, the Bat Trang tray consists of 6 bowls and 8 plates (also known as the Bat Tran tray), symbolizing prosperity and wealth, or 4 bowls and 6 plates symbolizing the four pillars, 4 seasons and 4 directions. In addition to popular dishes such as boiled chicken, ham, banh chung, fried spring rolls, the special thing in the Bat Trang tray is the squid bamboo shoot soup and kohlrabi stir-fried with dried squid. In which, squid bamboo shoot soup is considered the "soul" of the tray. This is an almost indispensable dish in important meals, especially in the New Year's Eve meal on the afternoon of the 30th of Tet. Currently, in Bat Trang, there are some households that accept orders for meals as well as open a service to prepare meals for guests at home to promote and introduce local cuisine.

Along with Thanh Tri rice rolls, La Vong fish cakes and Bat Trang dishes, this time, Hanoi has 6 more intangible cultural heritages listed, including: Tong Goi Tau Cheo Singing Festival (Dan Phuong), La Phu Village Festival (Hoai Duc), Dong But Pagoda Festival (Quoc Oai), Nanh Pagoda Festival (Gia Lam), Sai Temple Festival (Dong Anh) and Vong Communal House Festival (Thanh Xuan).
