Lima - the capital of Peru is expected to be the new destination for global food lovers, after two restaurants of this city were included in the Top 10 of the list " The World's 50 Best Restaurants 2025", in which Maido was honored to hold the number one position.
This prestigious award, considered the "Oscar of the culinary industry", was recently announced at the Awards Ceremony held in Turin, Italy.
Rising from fifth place last year, Maido - the restaurant of chef Mitsuharu “Micha” Tsumura took the crown thanks to its Nikkei style of cuisine, a combination of Japanese culinary techniques and unique Peruvian ingredients.
According to The World's 50 Best Restaurants, Maido “creates an experience that is both local and modern, creative and rich in cultural identity.”
At the awards ceremony, Chef Micha emotionally shared: “This is Maido’s 16th year. I believe that cuisine, from food to service, can create miracles.”
Not only Maido, Kjolle - the restaurant of chef Pia León, wife of famous chef Virgilio Martínez (Central) also appeared in 9th place. The appearance of two Lima representatives in the Top 10 further affirms Peru's new position as a global capital of creative cuisine.
Bright spots on the world culinary map
Coming in second on the list is Asador Etxebarri in Atxondo, Spain, known for its traditional charcoal grilling techniques. Coming in third is Quintonil in Mexico City, where chef Jorge Vallejo celebrates indigenous Mexican cuisine with modern innovations.
This year's list also sees the rise of Diverxo (Madrid, No. 4), Alchemist (Copenhagen, No. 5), and Gaggan (Bangkok, No. 6), all of which pursue unique culinary philosophies, exploiting surprise in flavor and presentation.
Asia made a strong impression this year with six Bangkok restaurants making the Top 50. The standout was Potong, a Thai-Chinese restaurant located in Bangkok's Chinatown, which ranked 13th, making the list for the first time.
Potong's five-storey space, which was once a herbal pharmacy since 1910, has now become a destination for heritage-inspired culinary creations.
Tokyo is represented by Sézanne (7th) and Narisawa (21st), while Hong Kong has Wing (11th) and The Chairman (19th) - two restaurants that represent the class of contemporary Chinese cuisine.
Meanwhile, London restaurant Ikoyi is the "fastest climber", rising 27 places from 42nd last year to 15th, famous for its West African-inspired smoked jollof rice.
In the US, the only representative in the Top 50 is Atomix (New York), ranked 12th and also just received the Outstanding Hospitality Service award at the James Beard Awards.
Big names and the “Hall of Fame” of world cuisine
By regulation, each restaurant can only win the “world number one” award once, after which it will be included in the “Best of the Best” program, a golden board honoring global culinary icons.
The list currently includes legendary names such as Geranium and Noma (Copenhagen), Eleven Madison Park (New York), The Fat Duck (UK), Osteria Francescana (Italy), Mirazur (France) and Central (Peru). The 2024 champion - Disfrutar (Barcelona) has also officially joined the list.
The annual list is compiled from votes from more than 1,100 international culinary experts, including journalists, chefs and restaurant professionals from 28 global regions.
The criteria not only consider flavor and technique but also creativity, customer experience and contribution to the development of international culinary culture.
The year 2025 marks a new phase of global cuisine, where cities like Lima, Bangkok, Tokyo or Mexico City are no longer secondary destinations, but are creative centers, accompanying Paris, London, New York on the journey to elevate culinary values to become international cultural symbols.
“Gastronomy is not only an art of taste, but also a cultural language that can connect globally,” says chef Mitsuharu Tsumura, Maido.
