Chef Baci announced the achievement on X, recalling her previous record set in 2023, when she cooked for a total of 93 hours and 11 minutes. However, Baci's 2023 record was later surpassed by Irish chef Alan Fisher.
The award was seen as an early birthday present for Baci, who turns 30 this weekend. Baci used a 6m diameter pot to cook 5 tons of basmati rice, 600 kg of onions, 750 kg of cooking oil, and tomato sauce, in front of about 8,000 people. This is a popular dish in West Africa, cooked from rice simmered in tomato sauce, served with meat or fish. There are many different versions around the world.
Jollof rice originated in the ancient Wolof empire, which stretched from present-day Senegal to Mauritania and Gambia. In the 14th century, the region was known for rice farming, and people would prepare a dish of rice, fish, seafood and vegetables called thiebou dieune. When the Wolof people migrated to West Africa, they brought their traditional food with them.
Currently, both Nigeria and Ghana claim to have the best recipe for this traditional rice dish, although in 2021, a Senegalese recipe was included on the List of Intangible Cultural Heritage by the United Nations Educational, Scientific and Cultural Organization (UNESCO).
